Starch is the only polysaccharide that can be assimilated by the human digestive system. There is a small part that our body cannot process, and that is resistant starch.

Why is this happening?

Because it reaches the end of the intestine and bacteria use it as food, transforming it into fatty acids such as butyrate, thus providing numerous benefits.

There are foods such as potatoes, sweet potatoes, legumes or cereals (such as rice or oats) in which we can find resistant starch. 

When starchy foods are heated and then allowed to cool, they change their composition and the starch becomes resistant starch - something our bodies will be very grateful for!
