What is Scoby or kombucha mushroom?

 Scoby is one of the four essential and necessary ingredients for making kombucha. You have probably known it as "the kombucha fungus". We say it is "the cause of all the magic".

It is a disc-shaped symbiosis of bacteria and yeast that, in the fermentation process, consumes sugar and green tea to produce a delicious drink with delicate bubbles: kombucha.
